Ingredients to make Chili’s roasted street corn

  • 6 ears of corn
  • 1/4 cup melted butter
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chopped cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic salt
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/2 cup crumbled cotija cheese
  • Fresh cilantro leaves, for garnish

Instruction

  1. Make the spice mix by combining the chili powder, chipotle powder, and smoked paprika.
  2. Wash the corn ears and husk them. Brush them with melted butter.
  3. Grill the corn ears over medium heat until they are charred and tender.
  4. In a large bowl, combine the mayonnaise, sour cream, cilantro, spice mix, garlic salt, lime juice, and lime zest. Stir in the cotija cheese.
  5. Brush the corn ears with the sauce and sprinkle with additional cotija cheese.
